To Ellen


This blog is made to the honor of my grandmother Ellen Elisabeth Thomsen who was a modern woman .
She was born in Randers in Denmark 1895 and died in Copenhagen 1976.
She had long salmon red hair down to her hips. It was braided and put up with lots of hairpins to make it look short.

Christmas 2014 and a happy new and bright 2015 to everyone .

And a typical Danish Christmas treat 
 The Honey Cake 
Have not tasted one of this for more than 40 years .
Our beloved Hasle Baker Stubb Holm used to make 
a special Christmas cake.
 It was a sort of Pepper cake but not brown like others
this were pale grayish with pink glaze.
His were made in  different Christmas shapes . A nan, a horse and a tree.
 Most were covered in dark pink sugar glaze.
The cakes were hard and difficult to bite in, baked from a  very pale  grey white dough
and then decorated  with a pink sugar with  fine details which  in a thin white sugar
almost like Hungarian pepper cakes. 
The horse which I loved the most was dipped in dark Chocolate
 and edged with green colored Cocos.
Would love to know that old recipe .
The picture underneath shows danish Honey Cakes,
 they are not anything like the Stubb-Holm Peppercake. 
Though except his were also sold in Christmas time.
